The new menu is crafted like a novel, retelling the journey that shaped Chef Hoàng Tùng’s culinary inspiration, from the Nordic region (the cradle of modern fine dining) to his return home.

Across 167 courses, 16 stories unfold, each reflecting local ingredients and the cultural influences of different culinary traditions.

At Å by TUNG, the plant-based tasting menu has always been a continuation of this philosophy. Each season is a deeper descent into the true essence of ingredients. And in this new menu, that journey is named ”SOLACE” — a quiet form of comfort.

Officially launched from JAN 2026, "SOLACE" plant-based tasting menu highlights seasonal local ingredients and modern techniques. Rather than intervening or transforming, "SOLACE" lets each ingredient speak for itself by choosing the right moment, honoring its natural character, and letting time do the rest.
