The new tasting menu at Å by TUNG is conceived as a culinary novel, where Chef Hoang Tung reflects on his journey through culture, technique, and native ingredients. A journey that begins in the North, the cradle of European fine dining, gradually expanding across different regions before ultimately returning to the familiar values of home.
From the kitchens of Northern Europe, where minimalism forms the foundation of culinary philosophy, Chef Hoang Tung learned to listen to ingredients with absolute respect. Every technique and flavour composition is designed to preserve the original essence of each dish.
Over time, travels and experiences across various regions shaped a deeper understanding of local identity, where ingredients carry the culture and memories of the people behind them.
“North to Home” therefore becomes a journey from the origin of technique to the place where emotions belong.
In this season’s menu, each dish is presented as a fragment of memory through a contemporary lens. Every course tells a story of a region, an ingredient, and memories preserved through flavour. Familiar elements are reinterpreted with a more refined and modern expression, while their original warmth and intimacy remain untouched.
